Pumpkin Maple Granola
 Toasted granola with almonds, coconut and vanilla.

  • 2 ½ cups rolled oats
  • ½ cup muesli
  • ¼ cup buckwheat groats
  • ¼ cup sugar
  • 2 tsp pumpkin pie spice
  • ¼ tsp salt
  • 3 tbsp coconut oil
  • ¼ cup maple syrup
  • ⅓ cup canned pumpkin
  • 1 egg white
  • ⅔ cup pecans
  • ⅓ cup pepitas

Preheat oven to 300 ℉. Mix dry ingredients in a large bowl. Mix oil, syrup and canned pumpkin until smooth. Froth egg white with a wire whisk. Add liquids and frothed egg white to dry ingredients, stirring until coated. Spread mixture onto 2 large baking sheets that are lined with parchment paper. Cook for 25-30 minutes, rotating pans and flipping once to ensure even cooking.


Add dried cranberries, cherries or other dried fruit when serving to keep them fresher.
