  • 1 ½ lbs lean ground turkey
  • 1 tbsp olive oil
  • ¼ cup red onion
  • 3 green onions
  • 3 cloves garlic, pressed
  • 2 tbsp fresh ginger, peeled and grated or minced
  • ¼ cup tomato paste, or ketchup
  • 3 tbsp brown sugar
  • 3 tbsp soy sauce
  • 1 tbsp Gochujang (고추장), or Sriracha
  • 1 tbsp Mirin (味醂), Shaoxing wine (紹興酒) or dry sherry
  • 1 tbsp sesame oil

In a large skillet, sauté onion in olive oil over low heat until translucent. Add meat to pan and cook until browned, flipping and chopping to make crumbles. Add the rest of the ingredients and mix thoroughly. Simmer covered for 20-30 minutes, removing lid towards the end if there is extra moisture. Serve over rice and garnish with thinly sliced green onion tops.
