Almond Vanilla Granola

  • 3 cups rolled oats
  • ½ cup muesli
  • ⅓ cup buckwheat groats
  • ¼ cup sugar
  • ⅓ cup coconut
  • ¼ tsp salt
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ⅓ cup honey
  • 3 tbsp coconut oil
  • ½ tsp vanilla
  • ½ tsp almond extract
  • 1 cup almonds, sliced
  • 1 egg white

Preheat oven to 300 ℉. Mix dry ingredients in a large bowl. Melt coconut oil, and add honey and sugar, mixing until dissolved. Froth egg white with a wire whisk. Add liquids and frothed egg white to dry ingredients, stirring until coated. Spread mixture onto 2 large baking sheets that are lined with parchment paper. Cook for 20-22 minutes, rotating pans and flipping once to ensure even cooking.


Add dried cranberries, cherries or other dried fruit when serving to keep them fresher.
