Peach Chutney
 Sweet and spicy chutney as a side or with bread.

  • ½ cup apple cider vinegar
  • ¼ cup brown sugar
  • 1 tbsp lime juice
  • ½ cup onion, chopped
  • 1 red bell pepper, chopped
  • 2 jalapeno pepper, julienne or diced
  • 2 tbsp fresh ginger, peeled and grated or minced
  • 2 cloves garlic, pressed
  • ⅓ cup raisins
  • ½ tsp salt
  • 2 ½ cups canned peaches
  • ½ tsp red pepper flakes, (optional)

Combine vinegar, lime juice and brown sugar in a medium sauce pan. Cover and cook over medium heat for 5 minutes, stirring occasionally to dissolve sugar. Add onion and simmer for 10 minutes. Add all of the remaining ingredients, except for the peaches and cook for 10 minutes. Add peaches and cook for 10 minutes. The lid may be removed during the last 10 minutes to reduce the liquid as needed.
