  • 2 tbsp canola oil
  • ¾ cup buttermilk
  • 3 tbsp nonfat milk
  • ½ cup whole wheat flour
  • 2 tbsp white flour
  • ⅓ cup rolled oats
  • ½ tsp baking powder

Combine flour, oats, and baking powder in mixing bowl. In a separate bowl beat egg, then mix in oil, add buttermilk and blend thoroughly. Add liquid mixture to dry ingredients, mixing just enough to combine, adding milk to proper consistency. Do not over mix, as you want small lumps. Let rest 10-30 minutes. Cook in non-stick waffle iron. Serve with honey, maple or berry syrup.
