Cut 2 slices of bread about 1/2 inches thick, spread mustard and any spicy additions (jerk, lime relish). Add 2oz of lean organic turkey or other sandwich meat. Heat panini press or electric skillet to 325 ℉, use about 1/2 tsp of olive oil on each side. Grill until browned as you like, flipping once or twice to get it just right. Serve with a pickle, fruit and a treat.
