 Ingredients
Meatballs
  • 1 ½ lbs lean ground turkey
  • 1 egg
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 1 tbsp fresh mint, or spearmint leaves, finely chopped (optional)
  • 2 cloves garlic, pressed
  • 1 tsp oregano
  • 1 tsp garlic salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup seasoned bread crumbs
Tzatziki Sauce
  • ½ cup nonfat Greek yogurt
  • ½ cup cucumber, peeled, deseeded and diced
  • 1 clove garlic, pressed
  • 2 tsp lemon juice
  • 1 tsp apple cider vinegar
  • 2 tsp olive oil
  • ½ tsp garlic salt
  • ¼ tsp black pepper
Greek Salad
  • 2 cups lettuce
  • ½ cup feta cheese
  • 1 cup cucumber, diced
  • ½ cup tomato, cut into wedges
  • 2 tbsp olive oil
  • 2 tsp lemon juice
Instructions

Combine Tzatziki sauce ingredients in a small bowl, mix and put in fridge at least 30 minutes before serving. Preheat oven to 400 ℉, line baking sheet with parchment. In a large bowl mix all the meatball ingredients, form into 1 inch balls, place on baking sheet, cook for 15-20 minutes. Prepare Greek salad and artistically arrange on festive plates, drizzle with olive oil and lemon juice or vinegar . Serve meatballs on salad with a dollop of Tzatziki sauce and fresh parsley.

Slice these and make a delicious pita sandwich with lettuce, cucumber, tomato and peppers.
