 Ingredients
  • 3 potatoes, russet or golden, medium size or 2 large
  • 3 tbsp canola oil
  • 2 tsp mesquite seasoning, or smoked paprika
  • ¼ cup bread crumbs
  • ½ tsp chili powder, chipotle or cayenne pepper
Instructions

Wash, then dice potatoes, removing any bruised or bad sections. Heat oil in non stick pan to around 325-350 ℉, add potatoes and cover. Turn a few times until all sides are browned and potatoes are almost cooked, remove cover. Add seasoning to taste, turn to coat, cook for a few minutes, add bread crumbs, turn to coat and remove from heat.
